Billed as a warm-season alternative to spinach, orach is actually a cool-season plant that doesn't go to seed as quickly as spinach. Also popular as a microgreen, it has a deep red/purple upper leaf with the shimmery underside characteristic of all orach (or triple in Italian).
Red orache microgreens contain high concentrations of vitamin K, which helps strengthen bones and prevent osteoporosis. They are also an excellent addition to any diet because they are high in protein, low in calories and rich in vitamins.
Red orache MICROGREENS : THE USES IN THE KITCHEN
Red orache microgreens can be eaten both raw and cooked. They are excellent added to salads. Alternatively they can be cooked by sautéing them in a pan with oil and onion, then using them as a side dish to a fish dish or in addition to potatoes.
When preparing atriplice microgreens it is good to remember that leaving them soaking contributes to the loss of the nutrients they contain, which is why it is recommended to wash them under running water, paying particular attention not to leave soil residues in the most difficult corners.
