Borage is a herbaceous plant whose height can reach 80 cm. The borage’s leaves are oval and covered with wrinkled down and blue star-shaped flowers. Borage is a spontaneous and infesting plant but it can be cultivated also by means of its seeds. The sowing period is the spring, directly on the soil, at a distance of 15-20 cm from each other. To obtain an excellent yield, the sowing operations should be in humid and properly sunny soils. Since it is an annual plant, borage dies with low temperatures. The borage’s leaves can be consumed in various ways: simply boiled and flavored with oil and salt, minced in omelets or raw in salads, by taking only the smallest and softest leaves. Borage has beneficial and anti-inflammatory effects, and in fact it is recommended as a remedy against cough and depression.
